Simple Roast Parsnips

    A very easy roast parsnip recipe to make throughout the winter when parsnips are in season. Use other dried and fresh herbs, if desired.

    Serves: 6 

    • 650g parsnips, peeled and cut into 5cm chunks
    • 2 tablespoons olive oil
    • 1 tablespoon dried Italian herbs
    • sea salt and black pepper to taste

    1. Preheat the oven to 200 C / Gas 6.
    2. Toss the parsnips with the olive oil and seasoning. Place in an even layer on a baking tray or dish; don't overcrowd. Divide the mixture between two trays if needed.
    3. Roast for approximately 30 minutes, or until tender, turning halfway through.
