About this recipe: Mashed potatoes can indeed be made ahead! This recipe lets you get ahead for the week or even for Christmas dinner.

Serves: 12 

  • 2.25kg floury potatoes, peeled and cubed
  • 170g cream cheese
  • 225ml soured cream
  • 120ml milk
  • salt and pepper to taste

  1. If not making ahead, preheat the oven to 170 C / Gas 3.
  2. Place potatoes in a large pan of lightly salted water. Bring to the boil and cook until tender, about 15 minutes. Drain, and mash.
  3. In a large bowl, mix mashed potatoes, cream cheese, soured cream, milk, salt and pepper. Transfer to a large casserole dish.
  4. Cover, and bake for 50 minutes in the preheated oven.
