Tomato chutney with a bite

    A spicy tomato chutney. I've made this a couple of times and it's enough to fill two jam jars full.

    Makes: 2 Jars

    • 1.5kg ripe tomatoes
    • 1 large onion
    • 350g brown soft sugar
    • 4 tablespoons fresh lime juice
    • 2 tablespoons fresh grated root ginger
    • 1 tablespoon chilli flakes
    • 2 teaspoons ground cumin
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground cloves
    • 2 teaspoons salt
    • 1/4 teaspoon Cayenne pepper

    1. Remove the stems from the tomatoes and chop the tomatoes into small pieces along with the onion.
    2. Mix all ingredients in a heavy-bottomed pan, and bring to the boil. Reduce the temperature and let simmer for 90 minutes without a lid.
    3. Season to taste. Pour while still hot into sterilised jars and screw tightly closed. Turn the jars upside down and stand them on their lids. Allow them to cool completely.

    I've never made chutney before and started with this recipe because it said it only did "2jars", however I had bought some small jam jars and the recipe filled up 6 easily. It was really lovely, quite sweet n savoury as well. I put a red onion in it and I blended it slightly just to make it not as chunky. Other than that, it's a brilliant recipe I can't wait to eat it!!  -  22 Jul 2014
