    About this recipe: This fresh and tasty coleslaw is perfect for BBQ's and picnics and it's totally fat free! It's high fibre, too.

    Ingredients
    Serves: 6 

    • 6 carrots
    • 1 small red cabbage
    • 6 spring onions
    • 1 red onion
    • 350g to 500g fat free natural yoghurt
    • 1 dessertspoon wholegrain mustard
    • squeeze lemon juice

    Method

    1. Grate all vegetables, except for the red onion, either by hand or in a processor.
    2. Cube the red onion and toss all vegetables together.
    3. In a separate bowl, combine yoghurt, mustard and lemon juice.
    4. Stir the yoghurt mixture into the vegetables.

    Tip

    Kept covered in the fridge, the coleslaw will last three days.
