Easy lemon icing

    This is a thin lemon icing for dipping biscuits, drizzling over a lemon cake or for covering fairy buns for a childrens birthday party. Any extra will keep in a covered tubberware bowl for a week or so.

    Ingredients
    Serves: 12 

    • 450 to 500g icing sugar
    • 60ml or 4 large tablespoons fresh lemon juice

    1. In a small bowl mix lemon juice and most of the icing sugar. If mixture is too thin add more sugar until desired consistency is reached.
