Easy brandy sauce

    This is a simple custard-style brandy sauce to serve with Christmas pudding or bread and butter pudding. It's also nice with a little orange zest added to it before serving, if you like.

    Serves: 4 

    • 1 level tablespoon cornflour
    • 1 heaped tablespoon caster sugar
    • 300ml milk
    • 4 to 6 tablespoons brandy
    • orange zest (optional)

    1. Blend the cornflour, sugar and a few tablespoons of the cold milk together until smooth.
    2. Heat the rest of the milk in a pot over low heat until it comes to the boil. Whisk in the cornflour mixture and continue to stir over low heat until it has thickened to your liking.

    Other flavours:

    You can alter the flavour of this sauce by changing the brandy to rum, or by using 1 teaspoon pure vanilla extract.
