Baileys® cheesecake

    A simple and tasty recipe. Quick and easy to make, just needs a couple of hours to chill. Will be a real friend pleaser!

    Serves: 8 

    • 115g (4oz) butter
    • 56g (2oz) light brown soft sugar
    • 225g (8oz) digestive biscuits, crushed
    • 115g (4oz) caster sugar
    • 200g cream cheese
    • 375ml double cream
    • 1 miniature Baileys® Irish Cream liqueur

    Prep:30min  ›  Extra time:2hr chilling  ›  Ready in:2hr30min 

    1. Melt the butter and mix with the brown sugar and crushed biscuits. Press into the bottom of a cake tin and set aside.
    2. Mix the caster sugar and cream cheese together until smooth.
    3. Whisk cream until thick and add to the cream cheese. Add the Baileys® and fold together.
    4. Spread over base and leave in fridge to chill. Enjoy!

    I made this for a dinner party and will make it again (and again...) It is very easy to make (and a forgiving recipe as I didn't have quite enough cream and it still worked well). It is delicious and may well become a staple. Thank you for this recipe  -  06 Aug 2012

    I made this to try it out before a dinner party, was so pleased with it put a picture on facebook, my kitchen was never empty, with everyone popping in for a taste! Delicious and very simple. I grated chocolate over mine and added some fresh raspberries for decoration.  -  09 Jul 2014
