Maltese chocolate bread pudding

    This is my modified version of the bread pudding that I have found here. I have tried it my way this weekend and it turned out pretty well. I hope someone tries it out and will get the same result that I did.

    Serves: 10 

    • 450g dry bread, torn into pieces
    • 175ml condensed milk
    • few drops vanilla extract
    • 1 tot aniseed liqueur or Brandy
    • 3 tablespoons unsweetened cocoa powder
    • 1 tablespoon caster sugar
    • 1 egg
    • 1 tablespoon butter
    • 1 tablespoon orange peel
    • 1 tablespoon lemon peel
    • 100g sultanas
    • 75g dates, chopped
    • 100g unroasted almonds, halved
    • 100g dessicated coconut
    • 1 tablespoon sesame seeds

    1. Preheat the oven to 180 C / Gas 4.
    2. Soak the bread in water and then put in a colander. Put some weight on the bread and press it until no more water comes out.
    3. Whisk together the milk, vanilla, aniseed, cocoa, sugar and egg in a large bowl. Soak the bread in the milk mixture. Add the butter, orange peel and lemon peel; mix gently using a wooden spoon. Fold in the sultanas, dates, almonds and coconut until evenly distributed. Put in a greased oven dish and spread some sesame seeds on the top.
    4. Bake in the preheated oven until golden brown, between 45 minutes and 1 hour depending on oven type. Serve cold.
