Broccoli and almond soup

    This soup is tasty and filling. Broccoli contains lots of vitamin C and almonds are rich in vitamin E.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 onion
    • 1L (35 fl oz) water
    • 4 teaspoons vegetable bouillon powder
    • 115g (4oz) whole almonds
    • 250g (9oz) broccoli florets

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Heat the oil over a medium heat, add the onion, roughly diced and fry until golden.
    2. Add the water, bouillon powder, almonds and broccoli.
    3. Simmer for 10 minutes before removing from heat and leaving to cool for 5 minutes.
    4. Blend!


    Can be stored in the fridge for 3 days or frozen for up to a month.
