About this recipe: This is an easy 20-minute recipe for rock cakes which is very tasty! They look hard on the outside, like the name, but they are not.

  • 110g self-raising flour
  • 75g butter
  • 75g light brown soft sugar
  • 1 egg
  • 2 teaspoons milk

Prep:20min  ›  Cook:30min  ›  Extra time:5min rising  ›  Ready in:55min 

  1. Preheat the oven to 170 C /Gas 3. Grease 2 baking trays or line with parchment.
  2. Sift the flour into the bowl and add in the butter and sugar; rub well.
  3. Add the egg and milk, stir together till crumbly; blob mixture onto your baking tray.
  4. Bake in the preheated oven until the edges are lightly toasted, for 30 to 35 minutes. Cool on baking trays for a few minutes before transferring them to a wire rack to cool completely.
