450g fresh mushrooms, sliced
1 onion, finely diced
1 tablespoon chopped parsley
6 (250g) fillet steaks
1 (500g) packet ready to roll puff pastry

In a large frying pan over medium heat, combine the mushrooms, onion, sherry, butter and parsley. Cook, stirring often, until the water from the mushrooms has evaporated and the mixture resembles a thick paste. Cover the top of each steak with the mixture.
Partially thaw the puff pastry sheets and roll out pieces thin enough to cover the top, sides and bottom of each steak. Place the pastry-covered steaks on a baking tray, cover with clingfilm and store in the refrigerator until you're ready to cook them.
Preheat the oven to 220 degrees C / Gas mark 7.
Bake the beef wellingtons for 25 minutes. The steaks will be rare but will continue cooking while the dish is resting.
