Spiced gingerbread icing

    This is a lovely icing you can use to decorate your favourite gingerbread biscuits. It is lightly spiced with cinnamon and ginger for great flavour.

    • 4 egg whites
    • 600g icing sugar
    • 2 teaspoons vanilla extract
    • 2 tablespoons ground ginger
    • 1 tablespoon ground cinnamon

    1. Beat egg whites in a large bowl until foamy. Gradually add the ginger, cinnamon and vanilla, and beat well. Add the icing sugar and beat vigourously until thickened.
