About this recipe: This is a steamed chocolate pudding that's more chocolate than anything else but it is lightly spiced with cinnamon and allspice so I call it my Christmas chocolate pudding. Much lighter than traditional Christmas puds at the end of a big meal.

Serves: 6 

  • 6 eggs, separated
  • 250g caster sugar
  • 250g dark chocolate, grated
  • 2 tablespoons breadcrumbs
  • 120g plain flour, sieved
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon

  1. Place a large pan of water on to boil. You will also need to lightly grease a 1 pound pudding bowl.
  2. Beat the egg yolks and sugar in a large bowl until light and fluffy. Add the grated chocolate, breadcrumbs, flour, baking powder, salt, vanilla, allspice and cinnamon; stir well.
  3. Whisk the egg whites until stiff; fold gently into the chocolate mixture.
  4. Pour the mixture into the greased pudding bowl. Lay a pleated and buttered sheet of greaseproof paper on top of the basin, buttered side down, then lay a pleated sheet of foil over that. Tightly tie string around the edge of the bowl to keep the parchment and foil in place.
  5. Place the bowl in the pan of boiling water, making sure the bottom of the bowl doesn't touch the bottom of the pan. Set a trivet, wire rack or upside-down saucer on the bottom of the pan to prevent this.
  6. Steam for one hour, topping up the water if necessary.
  7. Turn out onto a serving plate and serve with whipped cream or ice cream.
