Preheat the oven to 200 C / Gas 6. Grease baking trays.
Add the dry ingredients to the bowl of a food processor. While running, add the diced butter to the dry mixture, and keep processing until the mixture resembles breadcrumbs. While running, add the treacle and egg, and mix till a dough forms. Wrap with cling film and chill for 1 hour in the fridge.
Roll out the gingerbread mixture on a floured work surface. Cut out shapes with a biscuit cutter, and place on the prepared baking trays. Bake for 12 to 15 minutes until the biscuits risen slightly. Transfer to a wire rack to cool.
