About this recipe: Very simple curried egg served on toasted ciabatta. Nice brunch alternative. You can garnish with chopped fresh basil or parsley, if desired.

Serves: 1 

  • 2 free range eggs
  • 2 heaped teaspoons good quality mayonnaise
  • 1/2 teaspoon Ferns Hot Curry Paste
  • seasoning
  • 1 ciabatta roll, split

  1. Boil the eggs until hard boiled, approximately 10 minutes. Rinse under cold water and while tap is running, peel and rinse again.
  2. Place the eggs into a bowl and mash with a fork. Add the seasoning, mayonnaise and curry paste. Mix well.
  3. Toast the ciabatta roll and top with the curried egg mixture.

Serving suggestion

I use Ferns Hot Curry Paste as it has a great authentic taste - I use this to make Indian beef or chicken curries so I always have a jar in th fridge. It's well worth seeking out from Asian supermarkets.
