Curried egg brunch toastie

    Very simple curried egg served on toasted ciabatta. Nice brunch alternative. You can garnish with chopped fresh basil or parsley, if desired.

    Ingredients
    Serves: 1 

    • 2 free range eggs
    • 2 heaped teaspoons good quality mayonnaise
    • 1/2 teaspoon Ferns Hot Curry Paste
    • seasoning
    • 1 ciabatta roll, split

    Method
    Prep:3min  ›  Cook:10min  ›  Ready in:13min 

    1. Boil the eggs until hard boiled, approximately 10 minutes. Rinse under cold water and while tap is running, peel and rinse again.
    2. Place the eggs into a bowl and mash with a fork. Add the seasoning, mayonnaise and curry paste. Mix well.
    3. Toast the ciabatta roll and top with the curried egg mixture.

    Serving suggestion

    I use Ferns Hot Curry Paste as it has a great authentic taste - I use this to make Indian beef or chicken curries so I always have a jar in th fridge. It's well worth seeking out from Asian supermarkets.
