Boil the eggs until hard boiled, approximately 10 minutes. Rinse under cold water and while tap is running, peel and rinse again.
Place the eggs into a bowl and mash with a fork. Add the seasoning, mayonnaise and curry paste. Mix well.
Toast the ciabatta roll and top with the curried egg mixture.
I use Ferns Hot Curry Paste as it has a great authentic taste - I use this to make Indian beef or chicken curries so I always have a jar in th fridge. It's well worth seeking out from Asian supermarkets.
