Easiest roast aubergine

    A simple but delicious veggie dish to serve with all the usual roast side dishes. My partner eats meat but I don't - I made this the other night alongside the roast potatoes and carrots - really lovely and easy.

    Serves: 1 

    • 1 teaspoon oil or butter
    • 1/2 aubergine
    • salt and black pepper to taste
    • 2 teaspoon mixed herbs
    • 1 tomato
    • few slices mature Cheddar or mozzarella cheese

    1. Preheat the oven to 180 C / Gas 4.
    2. When you have about 1/2 hour left cooking time (if doing this alongside a roast, as I did) put a knob of butter or a drizzle of oil on your aubergine and put in the oven for 20 minutes.
    3. Take out the aubergine, and season with salt, pepper, and the mixed herbs. Slice the tomato and layer along the length and then top with the cheese.
    4. Put back in the oven for the final 10 - 15 minutes and serve. Absolutely lovely and a really good substantial alternative to meat or meat replacements.
