Fondant icing for a stand mixer

    This is an easy fondant recipe using marshmallows and your electric stand mixer. Use for decorating your favourite cakes wherever you would use regular fondant icing!

    Makes: 1 to 2 kg fondant icing

    • butter or margarine, for greasing
    • 900g icing sugar
    • 450g marshmallows
    • 4 tablespoons water

    1. With butter or margarine, grease your mixer's bowl and dough hook, as well as a heat-proof mixing bowl and a silicone spatula.
    2. Sift the icing sugar into a clean (ungreased) bowl. Set aside.
    3. In the greased mixing bowl, combine the marshmallows and water. Microwave on short 30-second intervals until the marshmallows are melted.
    4. Place 3/4 of the icing sugar into the mixer bowl, along with all of the melted marshmallow. Mix on low, adding more sugar as needed to achieve a mixture that is firm and not sticky.
    5. Remove from bowl and knead on a clean and greased work surface (with greaased hands) to take care of any lumps and smooth it out.
    6. Wrap in cling film and leave at room temperature for 2 hours before using, or refrigerate in airtight bag until ready to use (allow to come to room temperature before using).
