Christmas leftovers shepherd's pie

    A hearty and tasty take on shepherd's pie, using all of your Christmas leftovers. You can use beef mince instead of lamb, and any other grating cheese instead of Cheddar, if desired.

    Serves: 4 

    • 425g mashed potatoes
    • salt and pepper to taset
    • 225g minced lamb
    • 225g leftover turkey, cut into small cubes
    • 1 carrot, chopped
    • 1 onion, chopped
    • 225ml leftover gravy
    • 4 tablespoons beef stock
    • 1/2 teaspoon Worcestershire sauce
    • 60g frozen garden peas
    • 75g grated Cheddar cheese

    1. Preheat the oven to 190 C / Gas 5.
    2. Add the lamb mince to a large frying pan set over medium high heat. Season with salt and pepper. Brown mince for 3 to 4 minutes (discard excess fat if desired).
    3. Add the chopped carrot and onion and cook for about 5 minutes. Add cubed turkey to the mixture and stir.
    4. In a separate pan, heat the leftover gravy together with the stock. Add the warmed gravy mixture to the mince mixture, along with the Worcester sauce and peas.
    5. Tip the mixture into a casserole dish. Spoon mash over top. Top with grated cheese.
    6. Bake in the upper part of the oven until cheese is browned and potatoes are warm, about 20 to 25 minutes.

    When dealing with xmas leftovers the last thing you want to be doing is adding more meat. I had way too much leftover turkey to begin with, this has doubled up the amount of leftovers and I'm already faced with turkey fatigue. I can still taste the turkey in the mix. May be better for a large family that has already eaten most the turkey and isn't still eating it on day 3.  -  27 Dec 2014
