    About this recipe: Simple lentil soup - perfect for those cold nights. Garlic, cumin and a squeeze of lemon flavour this warming budget soup.

    Ingredients
    Serves: 4 

    • 300g red lentils
    • 1 onion
    • 3 garlic cloves, chopped
    • 1 tablespoon olive oil
    • 1.5 - 2L boiling water
    • 2 chicken or vegetable stock cubes
    • 2 1/2 teaspoons salt
    • 2 1/2 tablespoons ground cumin
    • lemon wedges for serving

    Method

    1. Wash and soak lentils.
    2. Chop onions and garlic and fry in olive oil.
    3. Add lentils and stir, don't let it stick.
    4. Add boiling water, 1.5 - 2 litres depending how thick you want the soup. Add stock cubes, salt and cumin.
    5. Bring to the boil, turn down a little and leave to boil until the lentils are mashed.
    6. Squeeze on lemon to serve.
