Leftover turkey potato croquettes

    A tasty use for all those Christmas leftovers! These moreish croquettes can also be made with leftover roast chicken.

    Serves: 4 

    • 600g leftover mashed potatoes
    • 300g cooked turkey, cut into small bits
    • 2 eggs
    • 1 tablespoon fresh or dried parsley
    • salt and pepper to taste
    • 120g dried breadcrumbs
    • vegetable oil for frying

    1. Combine the mash, turkey, eggs, parsley, salt and pepper. For mixture into croquettes. Dredge in breadcrumbs. (Use seasoned breadcrumbs, if desired.)
    2. In a frying pan, heat the vegetable oil over medium high heat. Once hot, add the croquettes and fry till browned on all sides. Serve with leftover gravy, if desired.
