In a frying pan over medium high heat, melt the butter. Add the onions, celery and parsley. Cook until veg is tender.
Add sausagemeat, breadcrumbs, nutmeg, salt and pepper. Cook for 10 minutes, stirring occasionally.
Stir in white wine and optional dripping.
Use stuffing to stuff a turkey, or transfer to a 22x33cm baking dish. Cover with aluminium foil and bake in a preheated 180 C / Gas 4 oven for 45 minutes, then uncover and bake an additional 15 minutes.
