About this recipe: A warming turkey soup made with a leftover roast turkey carcass. This is a great way to use every possible bit of your bird!


Serves: 12 

  • 1 leftover turkey carcass
  • 3L water
  • 1 onion, quartered
  • 2 sticks celery, halved
  • 1 clove garlic
  • 1 (400g) tin chopped tomatoes, drained
  • 1 chicken stock cube (optional)
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon garlic powder
  • 350g soup pasta
  • 2 onions, chopped
  • 2 sticks celery, chopped
  • 2 carrots, chopped
  • 175g sweetcorn kernels
  • salt and pepper to taste

  1. Place the carcaass, water, quartered onion, halved celery and clove garlic in a large pan. Cover and bring to the boil. Reduce heat to a simmer, and let simmer for 1 1/2 hours.
  2. Carefully remove the turkey carcass from the pan and set aside. Strain the turkey stock through a fine mesh sieve, reserving the liquid and discarding the onion, celery and garlic.
  3. Once the carcass is cool enough to handle, pull the turkey meat from the bone in small pieces. Place the meat in a clean pan with the strained turkey stock.
  4. To the pan add all remaining ingredients, except for the pasta. Simmer for 30 minutes, then turn heat to medium-high and add the pasta. Simmer a further 10 minutes, or until pasta is tender.
