Herby turkey rice soup

    An easy turkey soup made with a leftover roast turkey, a few chopped vegetables plus rice and dried herbs that you probably already have in your cupboard.

    Serves: 6 

    • 1 turkey carcass
    • 2 bay leaves
    • 1 tablespoon olive oil
    • 3 sticks celery, chopped
    • 3 carrots, chopped
    • 2 onions, chopped
    • 120g rice
    • 1 tablespoon dried thyme
    • 1 dessertspoon dried parsley
    • 1 teaspoon dried oregano
    • salt and pepper to taste

    1. Place turkey carcass and bay leaves in a large pot. Cover with water and simmer for 90 minutes. When done, remove the carcass and strain the stock into a clean bowl through a fine mesh sieve.
    2. Once cool enough to handle, pull all leftover turkey meat off of the bones, and discard the carcass. Set the turkey meat aside.
    3. In a clean pan, heat the olive oil over medium heat. Add the celery, carrot and onion. Cook until soft, about 5 minutes.
    4. Add the turkey stock to the pan along with the turkey meat, rice, thyme, oregano and parsley. Season to taste with salt and pepper. Simmer for 45 minutes or until rice is cooked.
