    A very simple sponge cake with just five ingredients. Start with room temperature butter and eggs for best results.

    Serves: 8 

    • 100g butter
    • 100g caster sugar
    • 3 medium eggs
    • 1 tablespoon milk
    • 100g self raising flour

    1. Preheat the oven to 180 C / Gas 4. Grease a 20cm sandwich tin.
    2. In a large bowl, cream the butter and sugar with a wooden spoon until light and fluffy. In a measuring jug, beat together the eggs and milk.
    3. Add the beaten eggs to the butter mixture a tablespoon at a time, stirring after each addition. Sift in the flour and fold together gently (fold, do not stir).
    4. Pour into the prepared cake tin.
    5. Bake for 20 to 30 minutes. Remove from the oven and cool before icing.
