    About this recipe: A refined fruit crumble recipe. Only 206kcal per serving! This works with any tart fruit, especially apple or rhubarb.

    Ingredients
    Serves: 6 

    • 150g wholemeal flour
    • 75g light unsalted butter, cubed
    • 450g your fruit of choice, such as rhubarb or apple
    • 5 tablespoons water
    • 1 tablespoon ground cinnamon or nutmeg
    • 10g demerara sugar

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Place the flour in a large bowl. Taking a few cubes of butter at a time, rub into the flour. Keep rubbing until the mixture resembles breadcrumbs.
    3. Place the fruit in a large bowl with the water and sprinkle over the cinnamon or nutmeg. Stir well, being careful not to break up the fruit.
    4. Spoon the fruit mixture into the bottom of an appropriatly sized ovenproof dish, then sprinkle the crumble mixture on top.
    5. Lightly sprinkle the sugar on top.
    6. Bake in the oven until the crumble is browned and the fruit mixture bubbling, about 40 minutes.
    7. Serve with non-fat yoghurt.

    Maybe it's a misprint but I found that a TBS of nutmeg was far too much as it overpowered the taste of the rhubarb instead of complimenting it. Perhaps a tsp may be better or even omitting it altogether. - 07 Jun 2015
