    About this recipe: A warming mild spicy chicken dish for all the family, served with rice. The surprise ingredients are apple and dark chocolate!

    Serves: 6 

    • 1 tablespoon cooking oil
    • 4 onions, chopped
    • 2 cloves garlic, finely chopped
    • 1 small cooking apple, chopped
    • 2 teaspoons ground cumin
    • 2 teaspoons ground coriander
    • 1/2 teaspoon ground cinnamon
    • 1 teaspoon garam masala
    • 1 teaspoon ground turmeric
    • 1 teaspoon cardamom pods
    • 2 tins plum tomatoes
    • 240 ml chicken stock
    • 12 chicken wings
    • 1 tablespoon dark chocolate, grated

    1. Heat the oil in a large stock pot and add the onion, garlic and apple and cook until the apple starts to go soft.
    2. Add the cumin, coriander, cinnamon, garam masala, turmeric and cardamom and cook for a further 2 to 3 minutes, stirring the whole time.
    3. Now add the tinned chopped tomatoes and their juice, continuing to stir, and then pour in the chicken stock.
    4. Finally, add the chicken pieces, ensuring they are covered by the sauce, turn the heat low and cook for 2 hours, stirring occasionally to ensure it isn't sticking.
    5. Just before serving, add the dark chocolate and stir in.

    Serving suggestion

    Serve on a bed of rice.
