Easy dark chocolate chip cookies

    These came out perfect the first time I made them and are very moreish. The whole family will love these!

    Makes: 20 Cookies

    • 225g butter
    • 140g dark brown soft sugar
    • 140g caster sugar
    • 2 eggs
    • 570g plain flour
    • 1 teaspoon bicarbonate of soda
    • 2 teaspoons salt
    • 1 tablespoon vanilla extract
    • 450g dark Belgian chocolate, chopped

    1. Preheat the oven to 180 C / Gas 4. Line your baking tray with baking parchment.
    2. Beat the butter and sugars in a bowl until smooth and creamy.
    3. Slowly beat the eggs in.
    4. Add in the flour, bicarbonate of soda and salt and mix in gently. Stir in the vanilla extract. Stir in chopped chocolate.
    5. Measure 1 tablespoon for each cookie and place on baking tray.
    6. Bake in the preheated oven until golden, 15 to 20 minutes.


    Use bicarbonate of soda, not baking powder - they are not he same thing. If you use baking powder, your cookies will be to soft and a bit like cake.


    You can make these without eggs by just not adding in the eggs. This will give them kind of a more crunchier texture like shortbread.
