    About this recipe: A sweet treat with bright colours and a great taste! If you want, you can add some extras onto the finished cupcakes. For example, you could add some edible glitter.

    Ingredients
    Makes: 12 Cupcakes

    • 100g butter or margarine
    • 100g caster sugar
    • 2 eggs
    • 1/2 teaspoon vanilla extract
    • 100g sifted self-raising flour
    • 1/4 teaspoon baking powder (optional)
    • food colouring (optional)
    • For the icing
    • 75g butter
    • 175g sifted icing sugar
    • a few drops vanilla extract
    • food colouring (optional)

    Method

    1. Preheat the oven to 180 C / Gas 4. Line a muffin tin with 12 paper cases.
    2. Beat the 100g butter and caster sugar until fluffy and light.
    3. Beat in the eggs one at a time. Make sure that you beat them in fully before adding in the next. Add in the vanilla extract and mix carefully.
    4. Mix in the flour, a little bit at a time. Also add the baking powder and food colouring if you are using them. Put an equal mix into each bun case.
    5. Bake in the preheated oven until a skewer inserted near the centre comes out clean, 10 to 20 minutes. Put them onto a wire rack to cool.
    6. Whilst the cupcakes are cooling, beat the 75g butter until it is very soft.
    7. Add the icing sugar gradually. If you add it too quickly then it will become very hard to stir. Stir until you have a thick paste.
    8. Mix in the vanilla extract and food colouring if you are using them. Make sure they are both very well mixed in.
    9. Make sure that the cupcakes are cool before you put the icing on. If they are too warm the icing will just melt and drip off the cupcake.
    10. Serve up and enjoy!

    Shortcut
