About this recipe: These muffins are delicious when eaten still warm, just baked out of the oven!!! They have a slightly bread-like texture and are really cheesy.

Serves: 9 

  • 50g butter or margarine
  • 175g plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon paprika
  • 2 eggs
  • 125ml milk
  • 80g Cheddar cheese, cut into small cubes

  1. Preheat the oven to 190 C / Gas 5. Line a muffin tin with 9 muffin cases.
  2. Melt the butter or margarine in a small saucepan over low heat. In a large mixing bowl, sift together the flour, baking powder and paprika. In a smaller bowl mix together the eggs and milk and then add the melted butter or margarine. Mix well. Fold the milk mixture into the sifted dry indredients and fold in with a metal spoon, but do NOT beat until smooth! The mixture should still be slightly lumpy.
  3. Place spoonfuls of mixture into each muffin case. Top each one with a few cubes of cheese, then add another spoonful of mixture to the top.
  4. Bake the muffins for 25 minutes, or until puffed and golden. Eat the muffins warm or room temperature.

I love these muffins. I made up a batch and added 1 tomato, chopped and 6 spring onions, chopped. They were delicious for a light tea. - 17 Oct 2011


Realy good with some Bovril spread - 31 May 2010


They were delicious when fresh, but quite dry the next day. I will think about maybe putting them in the microwave on the next day the next time I make them? - 26 Aug 2012
