A simple but delicious quinoa pilaf with courgette, onion and red pepper. Some fresh herbs or garlic can be added for more flavour.

1 small onion, finely chopped
1 courgette, chopped
1 red pepper, chopped
3 tablespoons olive oil
Salt and freshly ground pepper

Bring the water to the boil in a saucepan over high heat. When the water boils, add the quinoa, stir and cover. Reduce to low and cook, covered, 10 to 15 minutes, until water is fully absorbed. Stir occasionally.
Meanwhile: Heat 3 tablespoons olive oil in large frying pan. Add onion, and cook 3 minutes over high heat. Stir in pepper, and cook, stirring, about 5 minutes. Add courgette and 1 tablespoon of olive oil. Reduce heat to medium, season with salt and pepper, stir, and cook, covered, for 10 to 15 minutes. Vegetables should be tender.
When the vegetables and quinoa are ready, add the quinoa to the pan-fried vegetables, mix, taste and add more salt and pepper as needed. Cook on medium heat for 2 minutes. Serve hot.
