Warm goat's cheese salad

    Goat's cheese is a good source of protein and calcium, but has a lower fat content than many traditional cheeses. In this recipe it is marinated for an hour before grilled on toast - delicious!

    Serves: 4 

    • 4 tablespoons olive oil
    • 3 tablespoons white wine vinegar
    • 1 garlic clove, finely chopped
    • 2 tablespoons chopped fresh herbs, such as parsley or chives
    • good pinch of freshly ground black pepper
    • dash of Tabasco sauce
    • 1 log of goat's cheese, about 225g (8oz)
    • 1 baguette
    • 4 handfuls of salad leaves

    1. In a large bowl, combine the oil, vinegar, garlic, herbs, pepper and Tabasco sauce. Cut the cheese across into 12 slices. Add to the bowl and toss to coat with the marinade. Cover and leave to marinate for at least 1 hour.
    2. Preheat the grill. Cut the baguette into twelve 2cm (3⁄4in) slices and place on the grill rack. Toast on one side for 2–3 minutes.
    3. Drain the cheese, reserving the marinade. Turn the toast over and place a slice of cheese on top of each. Grill for a further 1–2 minutes.
    4. Make a bed of salad leaves on each plate. Place the cheese-topped toasts on the leaves and spoon over the reserved marinade.
