Vegan gingerbread

Tradtional gingerbread using apple puree instead of eggs and milk - lovely and moist, great for cold winter evenings!

I have a bit of a fear of baking but decided to tackle this and found it really easy to make. It came out lovely and moist and is very tasty! Love this recipe.

Nice even bake and well formed cake - next time I will make it with oil, rather than spread, to increase the moist texture and add a load more ginger, I like it super fiery! Overall a good recipe, thank you.
