Brown soda bread

    Beautiful brown bread. This brown soda bread is easy to make, even at the last minute. Cut a nice thick slice off and slightly warm through and then thickly spread the butter on.

    Makes: 1 loaf

    • 225g plain flour
    • 225g wholemeal flour
    • 2 teaspoons bicarbonate of soda
    • 2 teaspoons cream of tartar
    • 1 teaspoon salt
    • 25g softened margarine, plus a little extra for greasing
    • 300ml milk

    1. Preheat the oven to 220 C / Gas 7. Lightly grease a baking tray.
    2. Sift the plain flour, wholemeal flour, bicarb, cream of tartar and salt into the bowl; mix well.
    3. Add the margarine and rub into the mix until crumbly.
    4. Now stir in your milk to form a soft but not a sticky dough.
    5. Dust your hands with a little flour and bring the dough together and shape into a ball.
    6. Place the ball onto the baking tray and flatten slightly and cut a cross in the top of the dough to make into quarters.
    7. Now bake in the oven for 20-25 minutes until golden and risen and the base sounds hollow when the loaf is lifted. Wear an oven glove or a tea-towel and tap with your knuckles. Cool on a wire rack and allow to cool. I hope you enjoy.
