    About this recipe: These are delicious, light and fun to make with kids. Great for company. Just make twice as much as you plan because the family will devour the first batch.

    Ingredients
    Makes: 18 cheese straws

    • 85g unsalted butter
    • 125g plain flour
    • 1/2 teaspoon salt
    • 110g grated Cheddar cheese
    • 50g grated Parmesan cheese
    • 1/4 teaspoon cayenne pepper (optional)
    • 1 1/2 tablespoons milk

    Method
    Prep:20min  ›  Cook:15min  ›  Ready in:35min 

    1. Preheat oven to 180 C / Gas 4.
    2. Chop butter into thumb-sized bits. Place butter, flour, salt, cheese and cayenne in food processor. Mix until texture of large crumbs.
    3. Add milk and mix again until mixture forms a large dough ball
    4. Roll out dough to about 3mm thick. Using a thin knife cut a large square. Cut dough into thin slices about 10mm wide and about 15mm long. If the strips break, just pinch back together.
    5. Lay out strips on ungreased baking tray. You can also twist the strips a few times, but not required.
    6. Bake about 15 minutes until puffy and slightly browned. Do not over-bake.
    7. Remove from oven. Sprinkle lightly with a bit more grated Parmesan cheese.

    Really delicious and cheese flavour just right - not too subtle and not too strong. Didn't take 15 mins, 3 or 4 mins less for my oven. Next time might try alternatives to cayenne such as mustard powder or chilli powder. Yumm👍 - 29 Sep 2015

    Perfect first time. Put in Manchego instead of Cheddar as I was making 'posh' ones for a wedding. Used paprika instead of cayene as its what I had. And added mustard as seemed important from other reviews. 15min cooking time is spot on. Fabulous taste, really light with perfect texture. Very moorish. Hope I don't eat them myself before the big occasion. - 25 Sep 2015
