Vegan apple and sultana muffins

    These vegan muffins are great for lunchboxes or a tea-time treat, are egg and dairy free and delicious! Quick and easy to make.

    Makes: 10 muffins

    • 55g (2 oz) sunflower spread
    • 110g (4 oz) soft brown sugar
    • 170g (6 oz) apple puree
    • 1 tablespoon golden syrup
    • 150g (5 oz) self-raising flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground mixed spice
    • 80g (3 oz) sultanas

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. In a large mixing bowl, cream sunflower spread with sugar. Add syrup and apple puree, mix well.
    2. Sift flour, bicarb and spices together into the bowl. Beat thoroughly for about a minute. Stir in sultanas.
    3. Divide mixture between 10 to 12 muffin cases and bake at 180 C / Gas 4 for about 20 minutes.


    You can make this as a loaf - use a greased and lined loaf tin and bake for about 40 to 45 minutes.

    Love them as they are. But If you want to have a vegan pudding for yourself or a friend I popped a couple in the microwave for 30 seconds and topped with vegan custard. Pretty perfect autumnal pudding (as well as very good muffins).  -  27 Oct 2015


    This is an amazing recipe. I added a handful of flaked almonds as well as raisins and used oil instead of butter. It is the perfect for schools too - no dairy, no nuts (keep them out), no butter (if oil used), no eggs.....and smells great!!!  -  26 May 2014


    I've not actually tasted it yet but I find it looks, smells (shh! I licked the bowl but it tasted amazing) I added 1 teaspoon of cinnamon I hope its all right. I'm going to top it with some vegan chocolate frosting and here's the website:  -  27 Feb 2014
