Spelt banana cake

    A healthy treat to have with a cup of tea at any time of the day. Though it can be eaten straight away (it's lovely with custard!!) it will also keep for a few days in an airtight container.

    Serves: 8 

    • 55g (2 oz) margarine or butter
    • 55g (2 oz) apple concentrate / puree
    • 1 tablespoon honey
    • 1 egg
    • 170g (6 oz) spelt flour, sifted
    • 1 teaspoon baking powder
    • 1 teaspoon mixed spice
    • 4 tablespoons milk
    • 3 large bananas, mashed

    1. Cream together the margarine, apple and honey. Beat in the egg.
    2. Sift the flour, baking powder and mixed spice together and, alternating with the milk, gradually mix into the cake mixture.
    3. Pour half the mixture into a lined 15cm (6") round tin. Cover with a layer of mashed bananas. Pour remaining mixture over the top (spread evenly).
    4. Bake at 190 C / 170 C fan / Gas 5 for 35 minutes. Allow to cool for 10 minutes before turning onto a wire rack.
