    About this recipe: A quick simple shepherd's pie, anyone can make even my boyfriend, using tinned soup and frozen veg and mash, or you can convert the recipe using fresh potatoes and mash, but no one will notice how this recipe is so simple, they will be asking for more!

    Ingredients
    Serves: 4 

    • Oil to cook
    • 1 large onion, diced
    • 400-500g minced pork, beef or turkey
    • 1 carrot
    • Frozen garden peas
    • 295g tin of Campbells® condensed tomato soup
    • 3/4 soup tin of milk (or water)
    • 4 portions of frozen mashed potato

    Method

    1. Put small amount of oil in frying pan and bring to medium heat, then add onions. Two minutes later add mince and stir evenly leaving on medium heat.
    2. Meanwhile dice carrot into small pieces add frozen peas into a bowl add a good splash of hot water, cover with cling film and cook in microwave for three minutes.
    3. Once mince is looking cooked and starting to turn brown, add tin of soup and stir in. Add milk (or water but milk is best, or you can use half and half) using soup tin filling it to 3/4 level and stir thoroughly. Keep heat on medium making sure to keep stirring. Once the sauce starts to thicken add any seasoning you like, including chilli, salt or pepper, and add peas and carrots without any water from cooking in the microwave.
    4. Meanwhile whilst meat is cooking follow packet instructions of microwave potato and cook. Keep to one side adding anything you want to make potato more interesting, like cheese, garlic, or just keep plain.
    5. Once the meat and soup have cooked for about 8-10 minutes. remove from heat. Place in a serving dish and spoon the mash on top. You can put grated cheese on top if you wish and shove under grill or serve plain.
    6. Bish Bosh, Bobs your Uncle, cheap and gorgeous shepherd's pie, you will be sure to want a second helping!
