Cosy vegetable and lentil soup

    Cosy and warm, the best soup to have on cold winter nights. Enjoy this simple soup with a crusty buttered roll.

    Serves: 6 

    • 3 carrots, diced
    • 3 potatoes, diced
    • 2 leaves of curly kale, chopped
    • 2 leeks, chopped
    • 75g dried red lentils
    • 50g dried green lentils
    • 500g gammon
    • 1 pint water
    • 1/2 teaspoon black pepper

    1. Cook the gammon in a pressure cooker for 40 minutes; when cooked remove and set aside.
    2. Add the lentils to the gammon stock. Add the water, pepper and vegetables. Bring to the boil. Simmer with no lid, for 20 minutes (until vegetables are soft). Enjoy!
