Bratwurst pasta bake

    A hearty pasta dish, ideal for midweek supper. Lots of other veg can be added to this dish. Peppers, courgettes, peas, sweetcorn are just a few I have used.

    Serves: 4 

    • 225g penne pasta
    • 2 or 3 large bratwurst, sliced
    • 8 mushrooms, sliced
    • 1 (400g) tin tinned tomatoes or passata
    • 50 to 75g hard cheese, grated

    1. Heat oven to 200 C / Gas 6. Cook pasta according to instructions on packet, drain and pour into baking dish.
    2. Slice the bratwurst and add to the dish along with the mushrooms.
    3. Stir in the tomatoes and top with grated cheese. Cook in the oven for 25 minutes. Serve with a crispy green salad.
