About this recipe:
This was originally a batch of fairy cakes, but I had made the mixture before I realised we had no cake cases. So this was put into a lined loaf tin with some jam and my husband told me it was just like jam roly poly, but in a loaf shape instead!
110g (4 oz) butter or margarine
110g (4 oz) caster sugar
175g (6 oz) self raising flour
4 capfuls vanilla extract
3 to 4 tablespoons strawberry jam

Preheat the oven to 180 C / Gas 4.
Cream the butter and sugar together. Add the flour and eggs and mix well. Add the vanilla extract and cream well until light and airy.
Line a loaf tin with parchment. Pour a small layer of cake mixture and cover with jam. Pour in the rest of the cake mixture.
Bake in the oven for 50 to 60 minutes, or until the cake tests done in the centre. Leave to cool for about 10 to 15 minutes. Tip
To check if it is ready, slide a sharp knife into the middle. If it comes out clean, it is done.
This goes great with custard or ice cream.
To make this cake dairy free, ensure you use margarine instead of butter.
Great for a pudding after tea. Cooking time was too long in my oven so will reduce this next time.

I just made this for a picnic on a bank holiday monday tomorrow, so easy to make and cook! added 90g of sugar cause of the jam as I found it too sweet, but good recipe!
