Mum's Christmas stuffing loaf

About this recipe: My mum made this up as a Christmas accompaniment for dinner, and now it's one of our fondest Christnas treats!

Serves: 8 

  • 4 packs stuffing mix
  • 3 packs pork sausagemeat
  • large handful chopped cooked bacon or ham
  • 1 tablespoon English mustard
  • 1 tablespoon horseradish sauce
  • 1 tablespoon cranberry sauce
  • a few knobs of butter

  1. Soften two of the packs of stuffing in boiling water.
  2. Mix the wet stuffing, dry stuffing, sausagemeat, bacon, mustard, horseradish and cranberry sauce really well in a very large bowl.
  3. Place in a large oven dish, dot with knobs of butter and wrap well in foil.
  4. Cook at 180 C / Gas 4 for around 2 hours, then uncover and cook until browned.


Play with the recipe to create your own twist. Fresh thyme is good!
