Banana and blueberry cake

    Fast and easy recipe. Sugar free cake, so suitable for kids under 1 year, too (presuming that they like bananas...).

    Makes: 1 loaf cake

    • 140g wholegrain spelt flour, sifted
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon ground cinnamon (optional)
    • 1 egg
    • 4 tablespoons sunflower oil
    • 2 tablespoons pear concentrate
    • 3 large over-ripe bananas, mashed
    • 60g blueberries

    1. Preheat the oven to 150 C / Gas 2. Line a 450g (1 lb) loaf tin.
    2. Sift the flour, baking powder, bicarb and cinnamon together.
    3. Whisk the egg first and then add in the oil, pear concentrate and bananas, whisking after each addition.
    4. Mix the wet ingredients into the dry ones, and finally gently stir in the blueberries.
    5. Bake for 45 to 50 minutes. Allow to cool in the tin for 10 minutes before turning onto a wire wrack.
