Savoury pancakes

    If you are not a big fan of sweet pancakes in the morning (just like me) then you would love these savoury pancakes. Serve with a big dollop of soft cheese with chives and a cup of hot tea. Yum! Perfect comfort food for winter mornings.

    Makes: 8 Pancakes

    • 125g plain flour
    • 240ml milk
    • 2 eggs
    • 2 tablespoons spring onions
    • 1 tablespoon soft cheese
    • 1/2 teaspoon green chillies, finely chopped
    • 1/2 teaspoon fresh or dried parsley
    • 1 small cube chicken or vegetable stock
    • salt and pepper to taste

    1. Mix all the ingredients to make a nice batter; the consistency should be thick not runny. To check for the right consistency, lift your whisk over the mixing bowl and if your batter drops in a slow motion it should be the right consistency.
    2. Take a non-stick pan and pour two tablespoons full of the batter at one go depending on your desired size of the pancake. Cover and cook for about 1 to 1.5 minute and flip.
    3. Cook each side for approximately 1 - 1.5 minutes. Repeat procedure with the whole batter till you make enough pancakes to serve your whole family.
