Easy baked rice pudding

    As I remembered how my Gran's rice pudding tastes (who sadly died when I was young) I have tried many ways to make rice pudding and find that this is how I remember my Gran's. My family love this and always appear when I have made this.

    Serves: 6 

    • 170g (6oz) pudding rice
    • 1.8L (3 pints) milk (either full fat, semi-skimmed or both)
    • 60g (2oz) caster sugar, or to taste
    • 1 teaspoon ground nutmeg, allspice or ginger, as desired

    1. Preheat oven to 150 C / Gas 2.
    2. Add all ingredients to a deep ovenproof dish and place dish on a baking tray to catch any spillage.
    3. Place into oven on the middle shelf.
    4. You can either stir every half hour or leave for an hour and a half then stir.
    5. Once ready remove from oven and you can add some extra milk if required to make it more moist depending on consistency you like.


    Sultanas can be added after an hour if you like.
