Yummy rice pudding

    This is a quick, simple and tasty dessert and is great for the kiddies (tested on my own wee one who loves it) . . . great comfort food for a cold day!

    Serves: 4 

    • 30g butter or margarine
    • 125g pudding rice
    • 50g caster sugar, or more to taste
    • 65g sultanas or raisins
    • 2 teaspoons ground nutmeg
    • 1 1/2 pints milk

    Prep:5min  ›  Cook:3hr  ›  Ready in:3hr5min 

    1. Grease bottom and sides of slow cooker with butter or margarine.
    2. Add rice, sugar, fruit and nutmeg. Pour over milk and stir.
    3. Put slow cooker on Low for 3-4 hours. Check and stir after each hour.
    4. Serve hot with a teaspoon of jam on top. Enjoy.


    If you overcook slightly just add little splashes of milk and stir to desired consistency.

    Tried today using half measures for two servings. Big helpings but maybe a little sweet for my taste, easily sorted next time. In our slow cooker at low setting, needed nearer 4 than 3 hours. Very good, easy recipe that I will definitely use again.  -  14 Oct 2012
