In a large pot heat olive oil over medium heat. Stir in shallots and garlic and sautée until soft, 1 to 2 minutes. Add cumin, turmeric, fennel seed and chilli flakes and stir together until fragrant. Stir in tomatoes, then pour in fish stock, vegetable stock and wine. Season with oregano, thyme, salt and pepper and bring to the boil; reduce heat to low and simmer, stirring occasionally, for 10 minutes.
Purée soup mixture with a hand blender in pot (or transfer to blender in batches and purée until smooth and return to pot). Stir in feta cheese and continue simmering over low heat for 10 minutes.
Add prawns to soup and continue cooking for 3 minutes, or until prawns are opaque. Stir in fresh parsley and coriander just before serving.
