Lazy mornings

    This recipe, named by my mum, is so called because they are fairly easy to make and they are lovely to eat with jam and butter in the morning or to whip up for unexpected guests.

    Makes: 12 

    • 250g plain flour
    • 1 tablespoon baking powder
    • 1/4 teaspoon salt
    • 6 tablespoons butter
    • 180ml milk

    1. Mix the flour, baking powder and salt in a large mixing bowl. Slowly, add the butter in a bowl and use your hands to rub it into the flour. (This should not happen, but if the mixture starts to go mushy, put it in the fridge for a couple of minutes.)
    2. Start to add the milk and mix with a spatula. Try not to beat the texture out of the dough but just gently combine the ingredients. Once firm, knead it into a ball.
    3. Dust a flat surface with flour and roll the dough out. Use a cookie cutter or a cup and cut shapes about 1cm thick.
    4. Place the rounds on a baking tray and bake them for fifteen minutes, or as I like to do, until they are golden brown. Leave them to cool and enjoy!

    Other ideas

    Since this is not exactly a scone or a biscuit, you can really add almost anything to this recipe.
