Mum's beef in ale in the oven

    My all time favourite main, my mum cooks this whenever I come home now. Simple, no hassle, full flavour. A quicker (though still not quick) version.

    Serves: 4 

    • 1 onion, chopped
    • 2 carrots, chopped
    • 2 sticks celery, chopped
    • 1 handful button mushrooms, halved
    • 450g (1lb) stewing beef
    • gravy granules
    • 1 can ale (Guinness® works brilliantly)

    1. Preheat oven to 170 C / Gas 3.
    2. Place veg into casserole dish. Add beef to casserole dish.
    3. Make gravy to desired consistency by adding granules to ale and making to a pint with boiling water.
    4. Add gravy to casserole dish.
    5. Bake in the preheated oven for 3 hours.
    6. If gravy is a bit thin, add some more gravy granules.

    Serving suggestion

    Works great with any style of potato (especially mash). Any veg can be removed from the list, I only ever cook this recipe with onions, but I'm a fussy eater, also the thickness of the chopping is down to personal preference.
