Amazing biscuits

    One of the first things i ever baked with my grandma. Although there's almond in the recipe, it doesn't give the biscuits any amaretti like flavour. Seriously, even if you don't like almond, try these biscuits.

    Makes: 40 biscuits

    • 175g (6 oz) self raising flour
    • 85g (3 oz) caster sugar
    • 55g (2 oz) ground almonds
    • 150g (5 oz) margarine
    • 1 pinch salt
    • 12 drops almond extract

    1. Preheat oven to 180 C / Gas 4.
    2. Mix together the dry ingredients. Rub in margarine. Add almond extract and mix well.
    3. Roll out to about 3mm (1/4 in) thickness and cut with a biscuit cutter. Place biscuits on a baking tray lined with parchment.
    4. Bake for 15 minutes, or till golden brown.


    The dough can appear rather dry in this recipe, don't worry about it, I often get a very dry dough, but the biscuits still come out fine.

    Freezing tip

    The dough freezes really well, so you can make it in advance, freeze it, and thaw it when you want more biscuits.
