Crepe with ham, mushroom, cheese and spinach

    Savoury crepe / pancake filled with diced ham, mushrooms, spinach and cheese. Rolled and baked. Delicious. Nice served with a jacket potato and salad.

    Serves: 2 

    • 1 teaspoon olive oil
    • 1/2 onion, finely diced
    • 5 chesnut mushrooms, sliced
    • 2 slices good quality ham
    • 2 balls frozen chopped leaf spinach
    • salt and pepper to taste
    • generous splash white wine
    • 2 tablespoons cream (optional)
    • good handful grated mature Cheddar
    • 2 large pancakes or crepes

    1. Make a pancakes in advance or buy ready made. Pre-heat the oven to 180 C / Gas 4.
    2. Heat a saucepan with olive oil and pan fry the onion over medium heat until translucent. Add the mushrooms and ham, stirring often for 5 minutes.
    3. Add the spinach and stir well until melted into mixture, 5 minutes more.
    4. Add the salt, pepper and white wine. Turn heat up and bubble for a couple of minutes. Turn the heat down and add the cream (if using) and the cheese. Mix well until cheese really melts in.
    5. Spread half the mixture over the base of one pancake/crepe. Tightly roll up and tuck the ends under. Repeat with remaining pancake.
    6. Place into an ovenproof dish and bake for 20 minutes. The outer side of the pancake will get a little crispy. Take care when removing onto a plate ensuring the filling does not escape too much.
